YUMM-O

I LOVE Mexican Food!!  I found this new recipe, TWEAKED it a little, and now have a new favorite dinner! 

You have to try it!!

Round up your ingredients. . .

MEXICAN LASAGNA
1 pkg. 8oz Cream Cheese (I used 1 cup plain lowfat yogurt, to make it healthier)
1/4 cup chopped cilantro leaves
2 cups shredded Monterey Jack cheese, divided
1 can, 28oz, Enchilada sauce (I used Fire-Roasted Salsa, from Trader Joe's)
12 corn tortillas
3 cups of diced or cooked chicken
2/3 cup chopped onion
(I added about 1/2 cup Roasted Corn, from Trader Joe's)

Instructions
1) Mix yogurt (or cream cheese) with cilantro and 1 1/2 cup of Monterey Jack cheese (if you are using cream cheese you should microwave it to make it softer)

2)  To assemble, dip tortillas in salsa/sauce and arrance in baking dish.  Scoop half of cheese mixture over tortillas, spread evenly.  Top with 1 cupe of the chicken and 1/3 onion (I also added some roasted corn!!).  Reapeat layers one time.  Dip remaining tortillas into sauce nd arrange over second layer.  Top with remaining chicken and onion.  Pour remainin sauce over lasgna and sprinkle with remaining 1/2 up cheese.

3) Bake at 350 degrees for about 30 minutes, until cheese is melted.  Let it stand for 10 minutes.  Sprinkle cilantro on top. EAT!!!

It may not look pretty, but it's DIVINE!!!
